  • 12 medium sized potatoes, cut into 1/2" pieces
  • 4 bacon slices
  • 4 Tbs. butter
  • 4 shallots, sliced thinly
  • 2 large green onions, head and stem, sliced
  • 4 cloves garlic, minced
  • 16 oz. sour cream
  • 2 tsp . salt
  • 1 tsp . pepper
  • 1/2 C. whole milk

Preheat oven at 350 degree F. Grease a 9-by-13-inch casserole dish. Place potatoes in a large pot for boiling. Cover potatoes in cold water and cook on high heat. Once water begins to boil, cook for about 20 to 25 minutes or until potatoes are tender. While potatoes boil, place bacon in a medium skillet and cook slowly on medium heat, add 2 Tbs. butter to skillet. Once butter is melted, add shallots and cook until soft. Add green onions and cook for an additional 5 minutes. Add garlic and continue cooking mixture for 5 minutes. Drain potatoes.

In mixing bowl, mash potatoes. Mix potatoes with sour cream and bacon mixture. Add salt and pepper. Stir and add milk. Mash potatoes. Pour potato mixture in greased dish. Bake for 50 to 55 minutes.
