This is an Oriental soup made from leftover roasted turkey or chicken and is a perfect Fall (or any time of year) soup. My grandchildren love this soup. They look forward to leftovers the next day!

  • leftover roasted turkey or chicken from carcass (turkey carcass may be split to fit in stock pot)
  • giblets, cut up
  • water to cover carcass
  • 2 ham hocks or 1/2 ham steak
  • 2 fresh or 4 dried shiitake mushrooms, cut up
  • 3 carrots, cut up
  • 3 celery stalks with leaves, cut up
  • 1 med. onion, chopped
  • 1 1-inch piece fresh ginger, shredded
  • 1 clove garlic - minced
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 1 Tbs. parsley
  • 1/2 tsp. paprika
  • 1-2 C. rice (any kind but Minute rice)

Place roasted turkey or chicken carcass (with meat) in stock pot. Turkey carcass can be split in half to fit in pot. Cover with water. Bring to boil, then lower heat to simmer approximately 3-4 hours. Remove carcass from pot and place in bowl, set aside to cool. When cool, remove meat from bones with fork and discard bones. Return meat to stock in pot, add cut up ham steak or ham hocks, chopped vegetables, ginger, garlic and spices. Add 1-2 cups rice. Bring to boil and lower heat to simmer 45-60 minutes, until rice is cooked.

Serve with salad and dinner rolls.
