Great Custard Pie

  • 9" pie shell
  • 4 eggs
  • 2 1/4 C. milk
  • 1/2 C. sugar
  • 1 tsp. vanilla
  • 1 tsp nutmeg

Preheat oven to 300 degrees. Scald milk in saucepan. Beat eggs well. Add sugar and vanilla and beat again. Make sure milk is cool to touch, and then add egg mixture to milk and stir. (Warning: If milk is too hot it will cook the eggs before they can be stirred in.) Pour into pie shell and bake at 300 degrees for approximately 35 minutes.

Each oven varies and you will just have to experiment with yours until custard cooks without being watery.
