  • 10 oz. frozen spinach, chopped and drained
  • 1/2 C. feta cheese, crumbled
  • 1 Tbs. olive oil
  • 1 small onion, minced
  • 1 clove garlic, minced
  • 1 large egg
  • 1 sheet frozen puff pastry

Preheat oven to 400 degrees. In a large bowl, mix spinach, feta, oil, onion and garlic. Beat one egg and add to the mixture. Mix very well. Cut the puff pastry into nine squares. Place each square into muffin tin. Add filling and fold corners of pastry over the filling. Pinch together in the center. Bake puffs for 25 minutes or until golden.
