  • 1 large shallot, sliced thin
  • 2-3 Tbs. lemon juice
  • 2 lb. asparagus
  • 2 Tbs. oil, divided
  • salt
  • 1 tsp. garlic powder
  • 1 pint grape or cherry tomatoes, halved
  • 1 (15 oz.) jar of marinated artichoke hearts, halved

Before you make the rest of the salad, soak the slices of shallots in the lemon juice. Turn the grill on high. Brush the asparagus with 1 Tbs. oil and sprinkle with salt. Grill the asparagus for 5 to 10 minutes, or until they are tender when poked with a fork and charred nicely. Cut the stalks into bite-sized pieces. Mix the ingredients in a large bowl. Add as much of the liquid from the artichokes as desired. Serve chilled or at room temperature.
