  • 1-1.5 lbs. of skinless salmon, cut into 6 even pieces
  • 6 small tortillas, warmed
  • 12 leaves of butter lettuce
  • 2 jalapeno peppers, sliced
  • 1 cup of chopped fresh cilantro leaves
  • 2 avocados, thinly sliced
  • 1 large red onion, sliced
  • 1 cup of Cojita cheese
  • 1 cup of ranch dressing
  • 3 tablespoons of dried cilantro flakes
  • 3 tablespoons of olive oil
  • 1 tablespoon of lime juice
  • salt and pepper

Preheat grill to medium-high heat.
In a small sauce dish, mix olive oil, lime juice, salt and pepper together and thoroughly brush the mixture onto each piece of salmon. Place on grill and cook 5 minutes on each side, or until cooked through.
In another small sauce dish, whisk ranch and cilantro flakes together.
Assemble each taco with lettuce, a piece of salmon and avocado slices on each tortilla. Top with jalapeno peppers, cilantro and feta cheese. Drizzle with the cilantro ranch and serve immediately!
