8-10 servings


  • 2 tsp. dijon mustard
  • ½ C. white vinegar
  • 3 garlic cloves, minced
  • ¾ C. olive oil
  • 1 Tbs. fresh thyme, chopped
  • 1 Tbs. fresh oregano, chopped
  • 2 C. zucchini, sliced
  • 2 red peppers, cored and seeded
  • 1 summer squash, sliced
  • 1 red onion, finely chopped
  • 3 tomatoes, quartered and seeded
  • ¼ C. fresh basil, chopped
  • ½ C. mozzarella cheese, shredded
  • 1 box of penne pasta, cooked and cooled

Whisk together salt, pepper, mustard, and vinegar in a medium bowl
Sprinkle olive oil, and add in garlic, oregano and thyme, whisking well
Set the dressing aside
Prepare grill and brush lightly with vegetable oil
Brush vegetables with about half the dressing
Grill vegetables on both sides
Add the remaining dressing to the cooled pasta and toss together with vegetables
Serve immediately
