Firm zucchinis are in season and they are tastiest, grilled. Toss it with other fresh greens for a yummy Spring salad.

  • 2 zucchinis, sliced
  • 4 cups of baby spinach
  • 2 cups of kale, chopped
  • 1 cup of chopped walnuts
  • 2 cups of feta cheese crumbles
  • 4 tablespoons of lemon juice
  • 3 tablespoons of garlic powder
  • 2 tablespoons of toasted sesame oil
  • salt and pepper, to taste

Preheat your grill to mild heat.
In a bowl, toss the zucchini slices with sesame oil and salt and pepper. Evenly distribute on grill and cook about 3-5 minutes on each side. Let cool.
In a small dish, whisk together lemon juice, garlic powder and salt and pepper. In a large bowl, combine the slightly cooled grilled zucchini slices, spinach, kale and toss with the dressing mixture.
Serve topped with walnuts and feta.
