  • 3 Zucchinis
  • 1 Tablespoon of Olive Oil
  • 1 Pinch of Salt and Pepper
  • 1 ½ Ounces of Cottage Cheese
  • ½ Teaspoon of Lemon Juice

Combine the cottage cheese and lemon juice in a small bowl and mash with a fork until evenly mixed. Set this filling aside and cut the zucchinis lengthwise into slices that are about ¼ of an inch thick.

Brush the zucchini slices with olive oil on both side and sprinkle them with salt and pepper. Then grill or place on a grill pan until both sides are evenly cooked and tender -- 3-4 minutes per side. Let them cool just enough so that your hands don’t burn when you touch them!

Coat one side of a zucchini slice entirely with the cheese filling and then carefully roll it up. Repeat this process with the remainder of the slices.
