  • 1 Tbs. cooking oil
  • 1 large chicken thigh, boned and cut into small pieces
  • 2 Tbs. butter
  • 2 C. broccoli, cut into small pieces
  • 3 C. chicken broth
  • 1 (10 oz.) can cream of mushroom soup

Preheat your oven to 350 degrees F. In a skillet, heat cooking oil and saute chicken over medium heat until juices run clear. Set aside. Melt butter in large skillet. Saute broccoli. Boil in chicken broth for 10 minutes and drain. Save 1/4 C. chicken broth. Add chicken broth to broccoli mixture. Mix with chicken and soup. Stir well and simmer 2 minutes. Pour mixture in baking dish and bake for 25 to 30 minutes.
