Home-Style Turkey Soup

Be sure to make the most of your leftover turkey with this tasty day-after Thanksgiving feast.


  • 1 turkey carcass
  • 4 C. water
  • 8 C. reduced sodium chicken broth
  • 1 large onion, quartered
  • 1 C. rutabaga or turnip, peeled and diced
  • 1 C. celery, chopped
  • 1/4 tsp. dried thyme
  • 1/2 tsp. black pepper
  • 1 14 1/2 oz. can unsalted tomatoes
  • 1 16 oz. can white beans, rinsed and drained
  • 1/2 lb. leftover turkey meat, cut into bite-size chunks


Combine the turkey carcass, water, broth and onion in a large stockpot. Bring to a boil over high heat. Lower heat, cover the pot and simmer for an hour. Strain the mixture, discarding the carcass and onion. Skim off and discard the fat from the soup surface. Return the liquid to the stockpot. Add the remaining ingredients. Bring to a simmer and cook, covered, for about an hour.

Yield: 10 servings
