  • 2 bananas
  • 18 small cookies of choice (recommended: macadamia and white chocolate)
  • 1 cup of sugar
  • 4 tablespoons of flour
  • 3 egg yolks
  • 2 tablespoons of butter, softened
  • 1 teaspoon of vanilla extract

In a food processor, process one banana, sugar, flour, egg yolks, butter and vanilla extract until completely smooth.
Heat a small saucepan over medium heat and cook the processed mixture for 5-10 minutes until thickened. Remove from heat and chill in the fridge when cooled enough.
Crumble 12 cookies and line the bottom of 6 parfait cups with the cookie crumbs. Slice the other banana into thin slices and alternate with a slice or two and the cool pudding in each cup. Top each pudding cup with a cookie and any leftover banana slices or cookie crumbs.
