  • 1 package of uncooked penne pasta
  • 1 lb. boneless, skinless chicken breasts
  • 3 eggs, beaten
  • 2 C. Italian seasoned bread crumbs
  • 1 ½ jar of marinara sauce
  • 2 C. Mozzarella cheese, shredded
  • 1 C. vegetable oil
  • 2 C. flour
  • 1 C. Parmesan cheese, shredded
  • Basil, chopped

Preheat your oven to 350 degrees. Cook the pasta as instructed on the package. Drain it and set it aside. In a skillet heat the olive oil over medium heat. In separate bowls place the flour, egg, and Italian breadcrumbs into each. Slice your chicken and coat you chicken in the flour, egg, and Italian breadcrumbs. Place it on to the skillet. Remove them once they are golden brown. In a bowl mix together the pasta, chicken, 1 C. of mozzarella cheese, ½ C. of the shredded Parmesan cheese, and the marinara sauce. Spread the pasta mixture into a baking pan and let it cook for 30 minutes. Half way though sprinkle the remaining cheese over the top. Once it's ready garnish the dish with the chopped basil.
