  • 2 C. onion, chopped
  • 2 C. chicken broth
  • ½ C. heavy cream
  • 2 cans of fire roasted diced tomatoes
  • 1 T. brown sugar
  • 3 slices white bread, cut
  • 2 T. garlic, minced
  • 1 T. extra virgin olive oil
  • Salt
  • Pepper

Heat up your oil on a skillet. Sauté the onions until they are soft. When done, add them into the crockpot. Add in the tomatoes with the juice, the chicken broth and brown sugar. Let it cook for 3-4 hours on high. Mix in the bread and let it cook for another 10-15 minutes. Blend the mixture together until it is smooth. Add in cream and let it sit for 5 minutes before you serve.
