  • 2 cans chickpeas, drained and rinsed
  • ½ red onion, roughly chopped
  • 5 cloves garlic
  • ¼ cup parsley
  • ½ cup fresh cilantro
  • 2 teaspoons baking powder
  • 2 teaspoons salt
  • 1/3 cup flour
  • 2 tablespoons olive oil
  • ¼ teaspoon pepper
  • 2 cups plain Greek yogurt
  • ½ tablespoon fresh dill, chopped
  • ½ cucumber, finely chopped

Add the chickpeas, onion, garlic, parsley and cilantro into a food processor and pulse until it becomes a thick paste. Do not add water, be patient with the paste because there are no liquids, it will take a little longer to process. Once blended, pour into a bowl, add salt, baking powder, flour and pepper. Stir to combine well and then cover with plastic wrap and refrigerate for 2 hours. In a bowl, combine the yogurt, cucumber and dill. Mix well and then refrigerate until ready to use. Pour the oil into the crockpot. Pull the falafel batter out of the fridge, form small balls our of the batter and gently drop them into the crockpot. Cook for 3-5 hours, or until they turn golden brown. Remove with a slotted spoon onto a paper towel lined plate to gather any excess grease. Serve with sauce.
