  • 1 pound sweet potatoes
  • ¼ cup brown rice flour
  • Olive oil
  • Sea salt

Preheat the oven to 430F.
Wash and peel the sweet potatoes.
Boil a large pot of water and then add the potatoes.
Let the potatoes cook for about fifteen minutes—you want the potatoes to soften up, but still be firm to the touch.
Shred the potatoes using a grater.
Add the grated potatoes to a large bowl with the flour and mix together until completely combined.
Roll the potatoes into little tot shapes and place onto a lined baking sheet and drizzle with olive oil before sprinkling with sea salt.
Bake for about 30 minutes, flipping halfway through to make sure they crisp up on all sides.
You can serve these tots right then and there, or you can freeze them to save for a rainy day!
