  • Canola oil
  • 4 peeled potatoes
  • 1 1/2 Tbs salt
  • 1 tsp cracked black pepper
  • 1 egg, beaten
  • 1/2 C all-purpose flour
  • 1 tsp cayenne pepper
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder

Fill a thick cast-iron skillet equipped with a deep-fry thermometer halfway with oil, and heat oil to 375 degrees F.

Shred potatoes with a fine box grater then season with salt and pepper. Squeeze out the excess liquid from potatoes between two towels, then place in a bowl with the eggs and mix well.

Stir in flour, cayenne, smoked paprika garlic powder, salt and pepper until mixture is dry but moldable. Form the potatoes into tots and fry in batches for about 4 to 5 minutes.

Drain on a paper towel, then serve.
