This perfect dessert has a layer of crumbled sugar cookies, topped in a sugar apricots, drizzled in honey and then topped with cream cheese whipped cream and more cookies and fruit. There are so many layers of delicious flavor!

  • 2 cups pitted chopped apricots
  • 2 tablespoons granulated sugar
  • 6 ounces cream cheese
  • ¼ cup white sugar
  • ¼ cup buttermilk
  • ¾ cup heavy cream
  • 1 teaspoon vanilla
  • 1 package sugar cookies
  • 2 tablespoons honey

Toss the chopped apricots with the sugar and set aside the coated apricots. Beat the cream cheese in a bowl fitted with a paddle attachment. Beat until it is smooth using medium-high speed and then add the cream, buttermilk, vanilla, sugar, and a dash of salt. Beat until smooth. In a separate bowl, crush and crumble the sugar cookies. Distribute about 2 generous tablespoons of the crushed cookies at the bottom of 4 glasses or bowls. Spoon about 3 tablespoons of apricot over the cookies and drizzle honey over the fruit. Divide the cream cheese whipped cream among the bowls and top with remaining cookie crumbles and apricots. Chill until serving time.
