Honey Lemon Squares

  • 1/2 C. butter or margarine, softened
  • 1/4 C. powdered sugar
  • 1 C. + 1 Tbs. flour, divided
  • 3/4 C. honey
  • 1/2 C. lemon juice
  • 3 eggs
  • 1 tsp. grated lemon peel
  • 1/2 tsp. baking powder

Preheat the oven to 350 degrees. In a medium bowl, cream the butter and powdered sugar until light and fluffy. Add 1 C. of flour and mix until combined. Press the batter evenly into the bottom of a 9"-square pan. Bake for 20 minutes or until lightly browned. Meanwhile, in a medium bowl, whisk together remaining tablespoons of flour with the remaining ingredients until thoroughly blended. Pour over the baked crust and bake for about 20 minutes longer or until the topping is set. Cool in the pan set on a wire rack. Cut into squares to serve.
