These mini pies are the perfect sweet treat to indulge in without worrying whether or not you cut too big of a piece. This apple pie recipe relies on the convenience of instant mixes and tart and tender Granny Smith apples.

  • 4 large Granny Smith apples, cored and peeled
  • 1 ¾ C. water, divided
  • 1 package lemon gelatin
  • 1 package cook and serve vanilla pudding
  • 1 tsp cinnamon
  • ½ tsp. nutmeg
  • 2 sleeve graham crackers
  • ½ stick butter, softened

Using a food processor, pulse together graham crackers and butter until crumbly. Press into mini pie dishes or ramekins. In a large saucepan, bring 1 ½ cups of water, lemon gelatin, apples, cinnamon, and nutmeg to a boil. Cover, reduce heat, and simmer as apples become tender. In a small bowl, whisk together vanilla pudding mix and ¼ cup of water; pour into saucepan. Stir to combine as mixture begins to thicken. Remove from heat and pour into mini crusts. Refrigerate to set up and serve.
