This Indian-inspried chicken chili is made with classic curry. A little Indian spiced kick definitely takes hold in this chili.

  • 2 tbsp EVOO
  • 2 lb ground chicken
  • 1 garlic clove, finely chopped
  • 2 chile peppers, seeded and finely chopped
  • 1 red onion, finely chopped
  • 1 tsp dried ginger powder
  • 1 tbsp chili powder
  • 1 tbsp ground coriander
  • 1 tbsp ground cumin
  • 1 tbsp ground turmeric
  • Sea salt and freshly ground black pepper
  • 2 tbsp tomato paste
  • 2 C chicken stock
  • Toppings:
  • 1 C light sour cream
  • 2 1/2 tbsp Sriracha

Heat the EVOO in a chili pot over medium-high heat. Add the meat, then crumble and brown. Add the garlic, chiles, onions, ginger, chili powder, coriander, cumin, turmeric and some salt and pepper. Cook for 5 minutes, then add the tomato paste and stir a minute more. Add the stock and simmer for the flavors to combine, 15 to 20 minutes. Add a little light sour cream and sriracha and enjoy.
