Apple cake is a traditional sweet in Ireland. It is very similar to a simple spice cake with the addition of apples. The Irish apple cake would make a good treat for a St. Patrick's day party or just for a dessert on a winters night.

  • 1/4 cup butter
  • 1 cup sugar
  • 1 egg, beaten
  • 4 granny smith apples, cored and diced
  • 1/4 cup chopped walnuts
  • 1 teaspoon vanilla
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt, cinnamon, nutmeg
  • 1 cup all purpose flour

Preheat oven to 350. In a bowl cream the butter and sugar until light and fluffy, add the egg, apples, walnuts and vanilla. Sift in the dry ingredients. Pour into greased 8 inch square baking pan and bake until lightly brown and skewer comes out clean from center, about 45 minutes. Serve cake hot or cold with whipped cream or vanilla ice cream.
