  • 4 large red peppers, tops cut off and cleaned out
  • 1 lb. hot Italian sausage, crumbled
  • 1/2 C. onion, chopped
  • 2 garlic cloves, minced
  • 1 (14-oz.) can diced tomatoes
  • 2 tsp. Italian seasoning
  • 1 C. cooked rice
  • 1 C. mozzarella cheese, shredded
  • Salt and pepper to taste
  • Fresh basil for garnish

Preheat oven at 350 degrees F. Sauté sausage and onion until browned. Add garlic and sauté for 3 to 5 minutes. Stir in tomatoes and Italian seasoning. Simmer for 4 to 5 minutes. Stir in rice and season with salt and pepper (to taste). Stuff sausage and rice mixture into peppers. Place inside muffin pan and sprinkle with mozzarella cheese. Garnish with fresh basil. Bake for 25 to 30 minutes or until peppers are tender.
