These juicy stuffed tomatoes make the best presentation at any party or gathering. These surprisingly healthy tomatoes are stuffed with ground turkey, romano cheese and crunchy bread crumbs. It'll be hard to eat just one!

  • 6 Large Tomatoes
  • 2 Cups Cooked Brown Rice
  • 1/2 Pound Ground Turkey
  • 3/4 Cup Shredded Romano Cheese
  • 1/2 Cup Finely Chopped Onion
  • 1/4 Cup Minced Parsley
  • 1 Egg, beaten
  • 1/2 Teaspoon Salt
  • 1/2 Teaspoon Pepper
  • 1/4 Cup Dry Bread Crumbs
  • 2 Tablespoons Melted Margarine

Preheat oven to 350 degrees. In medium skillet, brown ground turkey. Cook rice as directed on package. Wash and cut the top off of each tomato. Scoop out insides and turn upside down to let drain. Mix cooked rice, cheese, egg, onion, parsley, melted margarine, salt and pepper in large mixing bowl. Fold in ground turkey and bread crumbs. Using a tablespoon, spoon mixture into tomatoes. Bake uncovered for 30 min or until done.
