1 loaf


  • 2¾ C. unbleached all-purpose flour
  • 1½ C. coarse yellow cornmeal
  • 1 Tbs. chopped fresh thyme
  • 1¼ tsp. kosher salt
  • 1 tsp. baking soda
  • Two eggs
  • ¼ C. melted, cooled and unsalted butter
  • ¼ C. light brown sugar
  • ¼ C. canola oil
  • 1 C. milk
  • ¾ C. crème fraiche
  • 1 C. fresh corn kernels

Preheat oven to 350 degrees F

Butter the baking dish/bread pan using additional butter than listed above

Mix and flour, cornmeal, thyme, salt and baking soda until combined

Whisk together the eggs, melted butter, brown sugar, oil, crème fraiche, milk, and corn until thick slurry forms

Pour egg mixture into cornmeal mixture and then fold together using a rubber spatula

Pour into baking dish and bake for 40 to 50 minutes until the top part turns brown


Let the bread to cool and then serve
