  • 4 catfish fillets
  • 4 hoagie rolls
  • ½ C. cornmeal
  • 1 Romaine Heart
  • 1 Bunch Parsley
  • ⅓ Cup Mayonnaise
  • ¼ Cup Dijon Mustard
  • ¼ Cup Sweet Pickle Relish
  • 2 tsp. Cajun spice blend

In a mixing bowl, combine the mayonnaise,salt, pepper, relish,½ tsp. Of the cajun spice, mustard, and parsley. Mix the cajun spice and the cornmeal. Dredge the catfish filets in the cornmeal mixture. Heat a large skillet on medium-high and cook it for 4 minutes on each side. Assemble the sandwiches and drizzle the cajun mayonnaise on top.
