Kale with Parmesan, Pine Nuts and Bacon Bits

  • 2 Tbs. pine nuts
  • 2 tsp. olive oil
  • 2 garlic cloves
  • 2 small bundles kale
  • 1/4 – 1/2 C. water
  • 2 tsp. soft tub margarine spread
  • 1/4 C. Parmesan cheese
  • 1 Tbs. Bacon Bits
  • salt and pepper to taste

Sprinkle pine nuts on the bottom of a large pot and toast. Remove and set aside the pine nuts. Sauté the garlic in olive oil. While the garlic is sautéing, wash the kale thoroughly and cut into bite-size pieces. Add the kale and the water to help with the steaming process. Cook the kale with the cover on for 10-15 minutes until it is tender, yet still has some crunch. Drain any excess water and place the kale in a large bowl. Add the spread and sprinkle on Parmesan cheese, bacon bits, and toasted pine nuts.
