Kentucky Bourbon Balls are a delightful concoction of sugar, butter, pecans and bourbon. They are then rolled and dipped in chocolate before being topped with a lovely pecan half.

Fist, put the nuts in a sealable container. Pour the bourbon over the nuts. Seal the container and allow the nuts to soak overnight.
The next day, mix the butter and sugar. Add in the nuts. Form them into 3/4" balls and refrigerate overnight.
When you’re ready to make the balls, start by covering a tray with waxed paper. Melt the chocolate in the top of a double boiler over lightly simmering water, make sure to stir frequently and scrape down the sides with a rubber spatula to avoid scorching. Roll the balls in the melted chocolate to coat.
Finally, store the balls in the refrigerator until serving.
