Ice cream is only made for special occasions, so we wanted to share an awesome recipe. The two layers of ice cream topped with a chocolate cake will become a new favorite.

  • 1 tsp. baking powder
  • 1 1/2 C. flour
  • 4 oz. butter, unsalted
  • 1/4 tsp. sea salt
  • 2 eggs
  • 1 C. brown sugar
  • 1 tsp. vanilla
  • 1/2 C. yogurt
  • 3 Tbs. cocoa powder
  • 2 Tbs. milk
  • 1 (1.5 qt.) container chocolate chip ice cream, softened
  • 1 (1.5 qt.) container chocolate ice cream, softened
  • 1 (7.25 oz.) chocolate topping bottle

Prepare cake first. Preheat your oven to 350 degrees F. Mix baking powder, cocoa, flour and salt. In a separate bowl, stir vanilla, butter and brown sugar while adding one egg at a time. Add flour mixture, milk and yogurt. Mix well. Pour in 9-inch cake pan. Bake for 25 to 30 minutes. Whe cake is cool, spread softened chocolate ice cream on a plate. Then top with chocolate chip ice cream. Place cake on top of ice cream as you pour chocolate topping over entire cake. Cover and freeze for at least 2 hours.
