Lemon Delight

A nice refreshing recipe you're sure to enjoy!

  • 3 eggs, separated
  • 1/4 C. flour
  • 2 Tbs. melted buter or margarine
  • 5 Tbs. lemon juice (juice of 2 lemons)
  • 1 1/2 C. milk
  • 1 C. sugar
  • 1/8 tsp. salt
  • grated peel of lemon (lemon zest)


Beat egg whites until stiff peaks form. In another bowl, mix sugar, flour, and salt. Stir in melted butter, lemon juice, lemon peel, well-beaten egg yolks, and milk. Beat until smooth and creamy. Fold in beaten egg whites. Turn mixture into 1-qt. casserole and set in a shallow pan of hot water. Bake in a 350-degree oven forĀ 1 hour. Serve cold. Garnish with whipped cream if desired.
