  • 3 C. water
  • 2 C. vegetable broth
  • 2 T. olive oil
  • 6 cloves garlic, minced
  • ½ onion, diced
  • 1 ¾ C. rice
  • 1 T. lemon zest
  • 1 C. calamari, thinly sliced
  • ¼ C. Parmesan cheese
  • 2 T. lemon juice

In a large skillet, heat oil and sauté garlic and onion until softened. Add rice, stir to coat, and pour in wine and lemon zest. In a saucepan, bring water and broth to a boil. Pour broth mixture over rice in portions, stirring to allow the broth to absorb. Stir in calamari, Parmesan, and lemon juice. Cook for 5 minutes and serve.
