  • Cupcakes:
  • 1 C. flour
  • 3/4 C. self-rising flour
  • 1/2 C. butter, softened
  • 1 1/4 C. sugar
  • 2 large eggs
  • 2 1/4 Tbsp. fresh lime juice
  • 1 Tbsp. finely grated lime peel
  • 1/4 tsp. neon-green food coloring
  • 3/4 C. buttermilk
  • Frosting:
  • 1 pkg. cream cheese, room temperature
  • 1 1/2 C. powdered sugar
  • 1/2 C. butter, softened
  • 1 Tbsp. finely grated lime peel
  • 1/2 tsp. vanilla extract
  • 2 Tbsp. green decorating sugar (for garnish)

Preheat the oven to 350 degrees and put paper liners in the muffin cups. Combine both flours in a bowl. In another bowl beat the butter until smooth. Add the sugar until well blended Slowly add the eggs, lime juice, lime peel, and food coloring. Add the flour mixture alternately with buttermilk. Spoon a bit of batter into each liner. Bake 25 minutes until a toothpick comes out clean. Cool 10 minutes. Meanwhile, make the frosting by beating all the ingredients in a bowl. Pipe onto the cupcakes and top with green sugar.
