  • 2 skinless and boneless chicken breasts, cubed
  • 2 cups of cooked brown rice, split into two serving bowls
  • 1 cup of steamed broccoli florets
  • 2 bell peppers, thinly sliced
  • ¼ cup of soy sauce
  • 3 tablespoons of lime juice
  • 1 tablespoon of brown sugar
  • Sesame oil
  • Salt and pepper

Heat sesame oil over medium-high heat in a pan. Add bell peppers with salt and pepper and sauté until softened, about 10 minutes. Set aside.
Add soy sauce, lime juice, brown sugar and more sesame oil into the same pan. Add cubed chicken pieces and simmer for about 15 minutes until all the pieces are cooked through.
Arrange the chicken pieces on top of each bowl of rice. Top with the steamed broccoli florets and red pepper slices on the side.
