  • 2 lb. red potatoes
  • 8 slices bacon
  • 3 Tbsp. flour
  • 1 C. milk
  • 1 C. Sour Cream
  • 2 Tbsp. chopped chives, divided
  • 1 1/2 C. shredded cheddar cheese

Preheat the oven to 350 degrees. Boil the potatoes about 25 minutes until tender and drain. Meanwhile, cook the bacon and drain on paper towels. Crumble the bacon and set aside 1/4 cup. Cut the potatoes into slices and combine the flour and milk in another bowl. Add the sour cream. Mix in the potatoes, remaining bacon, and 1 tablespoon chives. Stir evenly until potatoes are coated. Pour the mixture into a casserole dish and top with the cheese. Bake for 30 minutes until bubbling. Sprinkle on the rest of the chives and bacon and serve.
