  • 1 large bag of tortilla chips
  • 2 tomatoes, diced
  • 2 large onions, diced
  • 2 diced green jalapeno peppers
  • 2 cups of fresh cilantro, chopped
  • ½ pound of ground chicken
  • 3 tablespoons of soy sauce
  • 3 tablespoons of mirin
  • 2 tablespoons of sugar
  • ½ cup of fried onion
  • 1 cup of sour cream
  • salt and pepper, to taste

Heat soy sauce, mirin and sugar and salt and pepper over medium heat in a pan, then add the ground chicken. Stir as the chicken simmers in the liquid until cooked thoroughly.
In a bowl, combine tomatoes, onions, jalapeno peppers and cilantro and salt and pepper to make the salsa.
Put tortilla chips on a plate and begin loading the nachos by layering the salsa, then sour cream and chicken, then top with fried onions.
