Lobster and Chive Bisque

A real treat by anyone's standards, this rich, creamy soup is absolutely heavenly.

  • 1 C. lobster meat
  • 2 Tbs. minced onion
  • 5 Tbs. butter
  • 4 Tbs. all-purpose flour
  • 3 C. milk
  • 1 1/2 tsp. salt
  • 1 C. heavy whipping cream
  • 3 Tbs. chopped fresh chives

In a medium size pot, sauté lobster meat, onion and butter until onions are soft. Stir flour into the pot. When all ingredients are well blended, add milk, salt and cream. Cook over a low heat until soup has thickened. Garnish soup with green onions before serving.
