Low Fat Tomato Pasta Salad

With tomatoes,onions and just the right amount of spice, this pasta salad is perfect for a picnic.

  • 4 oz. pasta, uncooked
  • 1/2 C. nonfat or low fat plain yogurt
  • 1 Tbs. spicy mustard
  • 1/2 tsp. salt (optional)
  • 1 green jalapeno pepper, minced
  • 4 medium tomatoes, seeded and chopped
  • 2 green onions, trimmed and sliced
  • 1 green pepper, diced
  • Olives (optional)

Cook pasta and drain. Rinse with cold water and drain well. Mix the yogurt, mustard and salt (if using) in a bowl large enough to hold the salad. I use a whisk. Mix in the pasta, jalapeno, tomatoes, green pepper and green onion. Cover and refrigerate about 2 hours or until chilled.
