  • 2/3 C. butter, room temperature
  • 1 3/4 C. sugar
  • 2 lg. eggs
  • 1 1/2 tsp. vanilla
  • 2 1/2 C. whole wheat flour
  • 2 1/2 tsp. baking powder
  • 1 tsp. salt
  • 1 1/4 C. whole milk
  • 3 C. apple butter

Preheat the oven to 350 degrees. Beat butter and sugar in a stand mixer until fluffy. Slowly add the eggs, one at a time, and beat them well after each one is added. Add vanilla. Combine flour, baking powder, and salt. Add the flour mix and the milk to the butter and sugar in alternating batches.

Pour the mix equally into two 9-inch cake pans, and bake for approximately 30 minutes or until a knife inserted into the center of each comes out clean. Cool for about 10 minutes before removing, and then fill with apple butter. Cut into squares.
