Mama's Chicken N Dumplings

This has a very rich and creamy Southern taste to it!  The sauce in the dumplings should be thick and tasty.

  • 1 whole chicken, boiled and deboned
  • 12 hard-boiled eggs, chopped
  • 3 cans regular biscuits
  • 2 C. butter (4 sticks)
  • 1/2 tsp. salt
  • 1/2 tsp. pepper

Boil chicken in large stock pot and debone once done. Put chicken and cut up bolied eggs into stock pot on medium heat. Add all the butter or margarine to meat and egg mixture. Roll out the buiscuits one at a time on a floured sheet and cut into 1/2-inch pieces. Drop the biscuits into the boiling pot a handful at a time, stirring to mix in with the juices. Keep going until all biscuits are in the pot with the chicken, butter and eggs. Lower heat and let simmer until biscuits are done to taste.

The flour on the biscuits will help to thicken the broth in the dumplings. The thicker the broth, the better the dumplings will be. Remember to season to taste.
