Enjoy a thick and hearty stew from the Emerald Isles made with beef, potatoes, carrots, and onions. If you'd like a similar Irish experience, you can substitute the stew beef with cubed lamb and the beef stock with lamb stock for a lamb stew.

  • 2 Tbs. Butter
  • 3/4 C. Onions, chopped
  • 2 lb. Lean Stew Beef
  • 2 C. Red Potatoes, peeled and cubed
  • 3/4 C. Carrots, sliced
  • 1 Bay Leaf
  • 2 tsp. Thyme
  • Sea Salt, to taste
  • Ground Black Pepper, to taste
  • 2 C. Beef Stock

In a large stew pot, sauté onions in butter until soft. Add the rest of the ingredients to the pot, and bring stew to a mild boil. Reduce heat and let stew simmer uncovered for about 1 hour until the beef is done. Remove bay leaf and serve.
