  • 12 oz. penne pasta
  • 1 lb. chorizo
  • 1 (15 oz.) can tomato sauce
  • 2 C. mixed frozen vegetables (optional)
  • 1 1/2 C. shredded Mexican cheese blend
  • 1/4 C. sour cream

Preheat your oven to 350 degrees F. Take out a 9x13-inch baking dish and spray it with nonstick cooking spray. Bring a large pot filled with salt water to a boil over high heat. Add the pasta and prepare according to package instructions. Drain and then transfer the pasta back into the pot. When the pasta is cooking, use a large skillet to cook the chorizo for 10 minutes over medium heat. When cooking you can use your spoon to break up the chorizo. Get rid of any excess fat from the meat. Transfer the tomatoes, vegetables, cheese, sour cream, and chorizo into the pot with the pasta. Stir until thoroughly combined and then pour the pasta into your prepared baking dish. Cook the pasta in your preheated oven for about 25 minutes, which is when the pasta should be bubbly. Serve.
