Ingredients

  • 1 package of fresh strawberries, halved
  • 4 egg whites, beaten until stiff
  • 1 cup + 3 tablespoons of white sugar
  • 1 teaspoon of vanilla extract
  • 2 teaspoons of corn starch
  • 1 cup of heavy cream
  • handful of fresh mint leaves

Preheat oven to 325 degrees Fahrenheit.
Gradually combine the cup of sugar, vanilla extract and corn starch with the stiffly beaten egg whites for the meringue. Set mixture aside.
Line two sheet pans with parchment paper and distribute 8 equal scoops of the mixture between the pans. Bake for about 45 minutes. Let the meringues cool completely once done baking.
Beat the heavy cream on medium and slowly add the 3 tablespoons of sugar. Beat until peaks form. Scoop into a piping bag and frost each chilled meringue.
Top with strawberry slices and mint – serve!
