Making mini turkey meatloaves is a healthier alternative to traditional meatloaves. The recipe is simple and your family will love it. For a spicy variation add 1/2 pound of ground sausage. Using fresh ingredients is best but you can make substitutions. Mini loaves are great for kids and portion control, use a muffin pan for portion and for easy serving.

  • 1 pound ground turkey
  • 1 egg
  • 1/2 cup bread crumbs or dry cereal flakes
  • 2 large fresh tomatoes chopped
  • 1/2 yellow or red onion
  • 3 cloves garlic minced
  • 1/2 tsp Italian seasoning
  • 3 Tbs Worcestershire
  • 1 tsp soy sauce
  • salt and pepper

Combine all ingredients. Optional; add 1/4 pd sausage and 1/4 bread crumbs. Mix together all of the ingredients well, separate portions into muffin pans, meanwhile preheat your oven to 350 degrees. Cook for 1 hour and turn up to 400 degrees for 15 minutes to brown.
