  • 2 1/4 C. flour
  • 3/4 tsp. baking soda
  • 1 tsp. salt
  • 2 sticks softened butter
  • 1 C. sugar
  • 1/2 C. brown sugar
  • 2 large eggs
  • 1 1/2 tsp. vanilla extract
  • 1 1/2 C. semi-sweet chocolate
  • 1/2 C. chopped bittersweet chocolate chunks
  • 6 C. mint chocolate chip ice cream
  • 1/3 C. semisweet chocolate chips

Preheat the oven to 350 degrees. Mix the flour, baking soda, and salt in a large bowl. Cream the butter and sugars together until fluffy. Add the eggs and vanilla and mix well. Beat in the dry ingredients gradually until a dough forms. Stir in the chocolate chunks and chill the dough 30 minutes. Scoop 2 inch dough balls onto cookie sheets and flatten slightly. Bake 15 minutes until golden brown. Cool the cookies completely. Let the ice cream thaw out of the freezer for at least 5 minutes. Put 3 scoops of ice cream on the flat side of one cookie. Top with another cookie and press gently. Use chocolate chips to decorate the sides of the ice cream. Repeat with the rest of the cookies and serve immediately.
