These lamb chops are seasoned in a mint oil and served on homemade naan. It’s a perfect recipe for family dinner and there will likely be leftover naan to enjoy throughout the week.

  • 12 rib lamb chops
  • 1/3 cup olive oil
  • ½ cup chopped mint leaves
  • ¼ teaspoon red pepper flakes
  • 1 package active dry yeast
  • 1 cup warm water
  • ¼ cup white sugar
  • 3 tablespoons milk
  • 1 beaten egg
  • ¼ cup melted butter
  • 4 ½ cup bread flour
  • 2 teaspoons salt

Dissolve the yeast in warm water in a large bowl. Let is stand for 10 minutes and then stir in sugar, egg, milk, salt, and flour. Knead the dough for 8 minutes on a floured surface and then place the dough in an oiled bowl. Cover the bowl and allow it to rise for an hour. Punch the dough down and then roll the dough into golf-ball sized balls. Arrange the balls of dough on a tray and cover the tray. Allow the dough to rise for half an hour. Roll the balls of dough out into thin circles and grill the dough for 3 minutes. Brush the uncooked side of the dough with butter and turn over. Brush the other side with butter and cook for 3 minutes. Serve with meat.

To cook the lamb, preheat the grill with medium high heat. In a bowl, mix the olive oil, mint, salt, red pepper flakes, and salt. Brush some of this over the lamb chops. Grill the lamb for 4 minutes per side. Move the lamb to a serving plate and brush with the remaining mint oil.
