  • 3 onions, sliced
  • 2 zucchinis, sliced
  • 2 carrots, peeled and chopped
  • ¼ C. olive oil
  • 3 cloves garlic, minced
  • ½ C. dried apricots
  • 2 T. honey
  • 3 pods star anise
  • 2 tsp. ground coriander
  • 2 tsp. harissa
  • ½ tsp. cinnamon
  • 1 C. chicken broth
  • 6 chicken pieces, like drumsticks or thighs
  • Salt and pepper to taste

Preheat oven to 350 degrees. In a large skillet, heat half of the oil and sauté onions, zucchinis, carrots, and garlic until tender. Season with salt and pepper and stir in apricots, honey, star anise, coriander, harissa, and cinnamon. Transfer vegetables and spices to the bottom of a roasting pan. In the same skillet, heat remaining oil and brown chicken on all sides. Season with salt and pepper, transfer to roasting pan, baste with broth, cover with foil, and bake for 90 minutes.
