Kids love mac and cheese but this recipe adds mushrooms and chicken to make the macaroni a bit more mature. This way, the entire family can enjoy a mac and cheese dinner together!

  • 17 ounces macaroni noodles
  • 1 diced red bell pepper
  • 3 minced cloves garlic
  • 1 chopped onion
  • 1 pound boneless skinless chicken thigh fillets
  • 7 ounces sliced mushrooms
  • 2 cups vegetable stock
  • ¾ cup grated parmesan cheese

Preheat the oven to 390 degrees F and boil a large pot of water. Cook the pasta for 10 minutes and then drain the macaroni. Pour the noodles into a baking dish. Cut the chicken into cubes. Cook the onion in a skillet until it is transparent and then add the chicken and mushrooms. When the chicken is browned add the stock and garlic. Season with salt. When the pot simmers remove it from the heat and add ½ cup cheese. Stir and then pour the chicken mixture onto the pasta. Stir the meat and pasta together. Sprinkle the remaining cheese over the mix and bake for 20 minutes or until the top browns.
