  • 2 cans of crescent roll dough
  • 1 cup fresh Spinach
  • ¼ White Onion, diced
  • 1 clove of Garlic, minced
  • ½ tbsp olive oil
  • 1 cup crumbled feta cheese
  • 1 Egg
  • ½ tbsp Sesame seeds for sprinkling
  • Salt and pepper, to taste

First things first, heat your olive oil in a pan and sauté the diced onion until it turns softens. Then add the minced garlic and sauté for another minute or so.
Next, place your spinach to the skillet and mix it together with your onions and garlic. Saute until the spinach begins to wither and liquid dissipates from the pan, then remove from heat.
After you cook your veggies, you need to take a moment to preheat your oven to 400 F.
As your vegetables cools season, mix your feta cheese with salt and pepper in a large bowl. Add the cooked spinach to the bowl of cheese and mix to thoroughly combine.
Now that your filling is complete, it’s time to make an egg wash. Whisk one egg and a little water together and set it aside for later.

Once your components are all ready, you can begin to assemble your spinach puffs. Flatten your puff pastries and slice both into three equally-sized strips. Flatten the strips again to widen them even more.

Spoon about 3 tablespoons of your cheese and spinach mixture into the center of three of these dough strips. Be sure to leave about a quarter inch on all sides.
Then, place another empty sheet of dough on top of the spinach mixture and using your fingers press down and seal the edges around the spinach.
Brush the top with egg wash and lightly sprinkle the top with sesame seeds.
Finally, Bake the spinach puff pastry rolls at 425F for 18-22 minutes until they are golden and puffy.
