These granola bars are a great grab-n-go meal or snack. Blueberries and honey are an amazing antioxidant while the oats add in some fiber, making them a great start to your morning.

  • 2 cups of rolled oats
  • 1 cup of pumpkin seeds
  • 1 cup of fresh blueberries
  • 1 cup of peanut butter
  • ½ cup of coconut oil, melted
  • ¼ cup of raw honey
  • 1 teaspoon of vanilla

In a large bowl stir together the rolled oats, granola, pumpkin seeds, blueberries, peanut butter, melted coconut oil, honey, and vanilla until well mixed and slightly sticky. Pour onto a nonstick baking sheet and let set in the refrigerator overnight. In the morning, slice into a dozen bars and serve.
