  • 1 lb baby red potatoes
  • 3 Tbs. fresh basil
  • 1 small onion
  • 3 Tbs, balsamic vinegar
  • 1 Tbs. dijon mustard
  • 1 Tbs. lemon juice
  • 1 Tbs. minced garlic
  • 1/4 C. olive oil

1) Cube the potatoes and boil until tender.
2) In a large bowl, toss potatoes with fresh basil, onion, and salt and pepper to taste.
3) In a separate bowl, mix balsamic vinegar, mustard, lemon juice, olive oil and minced garlic. Pour this mixture over the potato mixture and serve.
